Not sure if you’re looking for scientific journals or not, but the top academic publishing companies are Elsevier, Springer-Nature, Wiley, and Taylor and Francis. Sage and Brill are also notable, then you have a handful of societies that do a lot of publishing like the American Chemical Society, American Medical Assoc, EMBO, and IEEE, and university presses like Cambridge UP, Oxford UP, U Chicago Press.
There are some companies like the Public Library of Science aka PLOS, eLife, PeerJ, and Biomed Central (BMC) that don’t have the 100+ years of history like the above but are generally highly regarded.
If you go searching the web, you can find all kinds of stuff that may or may not be a legitimate publishing operation, but the above entities have the bulk of the reputation, mindshare, and publishing output.
